Hello

To change the legend title, you can create a custom legend style and use a setter for the Header property:

<Style x:Key="LegendStyle" TargetType="ms:Legend">
  <Setter Property="Header" Value="LEGEND" />
</Style>

To remove the header completely, set the HeaderTemplate to be an empty DataTemplate:

<Style x:Key="HeaderlessLegendStyle" TargetType="ms:Legend">
  <Setter Property="HeaderTemplate">
    <Setter.Value>
      <DataTemplate />
    </Setter.Value>
  </Setter>
</Style>

Then of course set the LegendStyle property of your chart to be the custom legend style you create.
